Our whiskey is named “Spirit of Montbretia” – inspired by the fiery orange flowers that grow along the coast of Dingle.
They symbolize life, resilience, and the beauty of nature – qualities that also shape our whiskey.
Just as the Montbretia withstands the wind and salt, our whiskey preserves the spirit of its origin: wild, honest, and full of soul.

2014
The story of this extraordinary single cask whiskey began on Easter Monday 2014 when, on the last day of our trip to Ireland, we heard about a local distillery on the beautiful, very traditionally Gaelic Dingle Peninsula that we absolutely wanted to visit. A note was hanging on the closed gate saying “Visitors please call Mary,” followed by a phone number.
Mary arrived ten minutes later, smiling widely and guiding us for an exclusive hour and a half through the distillery that had only been established a little over a year prior. She told us quite a bit about the history of the place, the distillation process itself, and the unique aspects of the production and aging of Dingle Whiskey. This whiskey is triple distilled following the finest Irish tradition.
At the end of the tour, we received some documents about the Founding Fathers Program during a casual conversation. With this program, one could purchase a cask of whiskey in advance – even before the distillation – and thus become a “Founding Father”.
The program was strictly limited to 500 casks and, alongside the production of gin and vodka, helped finance the distillery during its early years until the first Dingle Whiskey could be released after at least 3 years of aging.
2015
Cask Nummer #454
Several weeks later, we signed the Founding Fathers Agreement and in January 2015, our whiskey was distilled by Master Distiller Peter Mosley and filled into an ex-bourbon cask number 454.
We became Founding Fathers of the Dingle Distillery, received a certificate, were commemorated on the Founding Fathers wall in the Dingle Distillery, and receive an annual invitation to the Founding Fathers Gathering.
2025
Spirit of Montbretia
Now this single cask and single malt whiskey is available after 10 years of aging in an ex-bourbon cask and in the unique climate of the Dingle Peninsula with its sea of Montbretia.
These orange blossoms shape our memories of the Dingle Peninsula and give our whiskey its name: Spirit of Montbretia.
